Gao Shan Rou Gui
高山肉桂
Good fragrance. The soup is fairly thick and smooth. The charcoal from the roast is present, but not overpowering. This tea is from my uncle, who produced our previous Gao Shan Rou Gui. The name "Gao Shan" means high mountain, as this garden is located at a higher altitude than most of Wuyishan. The garden is weeded with hand tools and pests are controlled with sticky traps and non-chemical means.
This tea does best when brewed with fast steeps. If you are going to let it sit a bit between steeps, perhaps leave the gaiwan lid off.
